Gluten-Free Spaghetti and HEALTHY FRIES!

After a pretty horrific experience with rice pasta a few months ago, I thought maybe my pasta days were over since I'm been eating more gluten-free. I took a chance and bought a new corn/rice blend the other day: I was so suspicious when I cooked it. The previous rice pasta I made just FELL apart as it was cooking. No bueno . This one was perfect! Topped with some chicken breast cooked in tomato sauce and rosemary, and a sprinkle of parmesan cheese on top. Yum! In other food news, I've been seriously overusing my oven lately. It's just so nice to have one after so long! EVERYTHING is being roasted, so I've made some pretty exciting healthy fries. Gluten-Free Week Recap

As you know, my "week" of gluten-free eating was actually only 5 days long: Monday-Friday. I wanted to eat my normal food during the half even if it wasn't GF, and I also wanted to be able to indulge afterwards with whatever I wanted! In those five day, I eliminated all gluten from my diet. Some big switches were wheat/rye bread for rice bread, wheat tortillas for corn ones, and replacing some of my snacks foods like pretzels and crackers for gluten free versions. In terms of my energy in that period, I didn't notice any difference. Where I did see a difference, however, was on the digestive side of things. While I definitely don't suffer from Celiac's Disease, my stomach was much happier eating wheat free. Less irritable, happier bathroom trips. Getting all the innuendo folks? Talking about poo. Gluten-Free and Long Run!

When I finished my sugar-free week  , I posted about trying some different styles of eating a week at a time. When I eliminate something from my diet, it really opens my eyes to the ingredients in food and causes me to think about what I'm putting into my body. For me, this is so important since I'm often guilty of tossing in whatever sounds good at the time! This week, I have decided to try eating Gluten-Free. I've read so much about people who live a GF lifestyle and I'm really curious to see how it works out for me. I love my carbs, so I was worried at first about eliminating things like bread, wheat tortillas, and pretzels. Once I started exploring though, I discovered just how many gluten-free choices there are for almost EVERYTHING! My recent purchases: Rice bread instead of my normal wheat/rye To replace Clif bars: Lara, Bumble, and Kind bars! Gluten-Free pretzels! With the basics covered, I'm really looking forward to the coming week of exploring...
