White Chocolate or Dark?

Ugh. Wasn't it just a few weeks ago that Blogger decided to go all crazy on us? And now the drama is repeating itself (at least for me!) It seems that when I write a post it takes a few hours to update on your readers. So...if it seems like I haven't posted in a while, check the blog out because maybe I already have! I guess yesterday my body was craving fiber. That or the heat made it impossible to think of eating anything actually cooked. Lunch was a salad with everything green I could find. Spinach, green beans, edamame, cucumber, corn, flax, and a little shredded mozzarella. Obviously I needed a little something something to round out the meal so I went with a little fruit salad of all my favorites. Trail Time Questions

As you might know already, I'm running a trail half marathon in a week. A WEEK. So excited I can't contain myself. This will be my longest race to date and while I know I can handle the distance (I've run up to 15 miles in my training) I'm at a loss about pacing. Ok fine, I'm at a loss about a lot of stuff but right now let's stick to pacing. On the road, I run with a specific time in mind. If I run on a trail, I normally don't pay much attention to the Garmin, unless it's telling me how to get back to the car since I'm hopeless at finding my way. Anyone know where home is? Anyone? When I ran my two previous races  I wasn't worried about times or splits or paces at all. They were on trails, and they were tough. I just ran the best I could and crossed my fingers. No More Boring Salads!

Seriously. Sometimes I feel like if I eat one more salad I'll cry. Probably because I'm so predictable and end up topping my lettuce with the same 3 things every time. Lately, I've been on a mission to branch out and spice up my salads. Trying out different combinations, and being a little more creative than iceberg lettuce, cherry tomatoes, and sliced cucumber. Which is basically what my salads used to be. Blech. I thought I'd put together a list of some amazing toppers to inspire you to make your own amazing salads for summer!
