White Chocolate or Dark?

Ugh. Wasn't it just a few weeks ago that Blogger decided to go all crazy on us? And now the drama is repeating itself (at least for me!) It seems that when I write a post it takes a few hours to update on your readers. So...if it seems like I haven't posted in a while, check the blog out because maybe I already have! I guess yesterday my body was craving fiber. That or the heat made it impossible to think of eating anything actually cooked. Lunch was a salad with everything green I could find. Spinach, green beans, edamame, cucumber, corn, flax, and a little shredded mozzarella. Obviously I needed a little something something to round out the meal so I went with a little fruit salad of all my favorites. It was officially the first pineapple of the summer and it was exactly as delicious as I thought it would be! Pineapple, strawberries, and grapes Lest you think this is just too healthy for me, don't worry. I was just getting the greens in so I could enjoy my new f...

Gluten-Free Day 3 and 2 Speedy Miles

Don't forget--if you haven't entered my GIVEAWAY yet, do it now! I wasn't quite sure how my taper week for the half was going to go--I haven't been following a schedule for the training, just a mix of things I put together for myself, so I didn't have anything to go by. I'm sort of winging it keeping the distances shorter and going by how I feel. Yesterday the plan was to rest, but after dinner I started feeling antsy and knew I needed a quick run to shake out my legs. I asked hubs to join me, and he said yes! We haven't run outside together in ages and I was so excited! We did a quick 2 mile loop and I led the way, trying to keep a good pace since he's always faster than me. I ran the 2 miles in 16:34. That's a 8:17 pace, what?!! I know it was only 2 miles, but man that make me feel like a rockstar. I know to some of you that's a little jog in the park, but for me---I might as well have been flying! We're on Day 3 here of Gluten-Free! ...

Peanut Butter Popcorn!

Before I let you get to the amazing Peanut Butter popcorn, you'll have to endure me blabbing on about my speed workout today. Or...you could just scroll down. But I'll know . Don't ask how, but I'll know. It was done on the treadmill, so I could control the pace, and essentially I matched each length of "recovery pace" (6.0) with the same distance at a hard/tempo pace (7.1-7.4). I really loved this! When I do longer intervals (i.e. a mile) I need a longer recovery time, so this worked. One mile slow, one mile fast. 3/4 mile slow, 3/4 mile fast, and so on down the line. I can't remember sweating this much EVER on the treadmill. That's always a sign of a good workout to me! Since you were so good and read all of my running nonsense you may now proceed to the good stuff.  Lately two of my favorite snacks have been PB and popcorn. It was only a matter of time before I figured out how to combine the two.  EASIEST RECIPE EVER: -Pop microwave popcorn -...
