I Walked a Mile! (And Made Manicotti)

I had the best workout ever today. I walked a WHOLE mile. My treadmill was starting to really question our relationship, but with one 17 minute walk I have proved that yes, we are truly meant to be.

Since the marathon (that would be almost 3 weeks ago) I haven't been able to run OR walk due to peroneal tendonitis in my right foot/ankle. Woe is me. Anyway, I have been feeling good for a couple of days so I tested it out and there was no pain. I'm crossing my fingers that tomorrow it's still ok....

Along with the walk I did a 12 mile easy cycle, 20 minutes of yoga and 20 minutes of abs/upper body. Most of that exercise was because it's good for you and blah, blah, blah - but also because this whole HBBC thing is making me competitive. I want more points! To make sure I got in my veggies today, I had this:



That dip in the middle is truly amazing. Just take plain Greek yogurt and mix in a tablespoon of parmesan cheese, salt, pepper and parsley. Tasty, high protein and easy! I don't know what it is, but I MUST place dried cranberries/raisins on my PB and celery. I just never outgrew ants on a log. 

While the dip was a success, dinner...not so much. I followed the exact recipe on the back of the manicotti box for a meat stuffed pasta. It was fine, just nothing special. I plan on playing around with the recipe to find something tastier to stuff it with.

Are you a fan of raw veggies? Any favorite dips?
I don't eat raw veggies often, actually - at least not like this as a snack. But I do love PB and celery. So tasty! I don't like many dips aside from hummus, so I'm happy to have created one I really like. 

Have you ever had manicotti/stuffed shells? What tastes best inside?
I am thinking something with ricotta cheese maybe? Have to hunt around for some recipes....

  1. oh my yum, i need to make that dip, asap. I eat raw carrots in my lunch every single day...and always dip them in my greek yogurt, so this is just adding a little extra :) I love manicotti and stuffed shells. I'm partial to spinach mixed ricotta. Yummm

  2. Ugh I'm sorry that you are injured! I have also had peroneal tendonitis since my first half marathon, about a month ago. I have run a little bit since then but it is taking a little while to go away.

    My husband and I always make stuffed shells! We use ricotta cheese, parmesan cheese and mozzarella cheese, eggs, parsley, etc. I'm sure you could add meat if you wanted, we never have since I only eat chicken and turkey.

  4. never put parm cz in my greek yogurt, but i'm going to give it a try now...sounds delish. scary thing is parm cz is my favorite food and i'll put it on anything.

  6. The first year Amanda did HBBC, Brent and I both participated. I was recovering from a torn IT band and unable to run, but I spent hours and hours on the bike trying to win. Silly competitive spirit :)

  11. Yay for getting back out there, I know a mile doesn't seem like a lot but it's HUGE. If you can't do one mile, you can't do 20...because then it'd be 19. Think about it...

  12. That dip looks really good. I'm excited to try it. I love how easy it is and that I always have those ingredients on hand. I don't eat raw veggies often, but I think I would more if I had something yummy and healthy to dip them in.

  15. I have been dealing with shin splints, and it's NOT from doing anything badass like a marathon. It makes me feel better that I'm not the only one walking these days. With that being said, please don't think I am happy you can't run. I am just feeling some solidarity.

  17. I just make a mixture of cottage cheese, little ricotta, parm, garlic salt and mushrooms or spinach (or neither). It always turns out so yummy. Then top it with marinara sauce and more sprinkled cheese. I haven't made this for awhile...probably shouldn't if I want the scale to be kind to me this week. :) Hope your foot continues to do better. Jess

  22. Another yummy greek yogurt mix in is those ranch seasoning packets. I get the fat free kind and put a few shakes in, great high protein dip or spread!

    And congrats on the mile. Hopefully your legs get back to normal soon!

  23. I don't eat much cheese anymore but I used to make a mean manicotti - stuff the shells with a combination of ricotta, frozen spinach, garlic and parm....yum.
    and get the no boil noodles..way easier.

  24. Red bell peppers are a great veggie to eat raw!! They're slightly sweet so sometimes I don't dip them in anything, but they're also amazing with hummus.

  26. I don't eat veggies raw too often either. I love hummus and sometimes some ranch type dips, but don't eat those often either.
    Manicotti is so good! I use a mixture of ricotta, a little parm, and a little mozzarella. To that I add pepper, garlic, basil, oregano, and parsley. Sometimes I'll add spinach too. Just depends on how I'm feeling. :)

  29. I love ants on a log!!! It never gets old! I actually prefer raw veggies over cooked ones and make my own dips all the time! I use greek yogurt as the base too! I love manicotti...my mom makes them but she does them the fatty way - ricotta cheese and spinach with a really thick garlicy delicious alfredo sauce! Good thing she only makes them once or twice a year!

    I am also sorry to say I missed your marathon...on my birthday! Congrats.

    Stuffed shells are to die for. But I usually do a lasanga...that weighs a ton and does not have an eye to health. Unless it's the health of my taste buds! It's one of a few dishes that I still do the "old family" way with no subs to reduce the calories. I find that having those special dishes that we always talk about the "link" to our past while making and eating is a nice way to feel that we are not giving up anything. But I am a raw veggie eater...sorry no good dips to share.

  32. Oooh a whole mile. Watch out Daily Mile, she's going to be topping the leaderboard again. :)

    When I make stuffed shells, I mix ricotta with a couple eggs, shredded mozzerella and spices and it usually comes out pretty well. If I'm feeling fancy, I add in sausage.

  34. i love broccoli and cauliflower dipped in hummus. I'll usually microwave them for like 30 seconds to soften them up, but it makes a great snack!

    I make ants on a log(your celery snack) all of the time for my hubby, boys and I...we love it with dried cranberries too!!!

  40. I just made stuffed shells and it was so easy! I think next time I will add more ricatta cheese because there didn't seem to be enough! I also love eating raw veggies and dip! Hate to say it but I love the store bought ranch dip! SO good!

    I like to mash white kidney beans and mix them with lots of garlic and a bit of yogurt and salt. You could also add a dahs of cumin if you like it... makes a 'faux' hummus. Yummo!

  44. Along with celery and peanut butter I'm obsessed with celery, cream cheese and olives! Chop up green olives, mix in cream cheese and stuff the celery with a little paprika on top. It's amazing

Race the Bar 5k Recap (AKA: A Personal Worst!)

Do you remember a few weeks back, when I was all braggy about running in Florida in February/March? Sunny mornings around a lake with a light breeze off the water have turned, cruelly, into humid stretches of time where I am humbly reminded of my own limitations. You guys, I see these gazelle-like creatures, men and women alike, who prance on my running route with compression socks, a soft glow of perspiration at their brow. It's beautiful. It's also a harsh reminder that I am not them. I am currently running in the thinnest, smallest items of clothing I can without offending anyone (shirt stays on, people). I dare not step outside without some awful visor or wide-brimmed hat. When I hop in the shower after a run, my face is a deep crimson that causes my husband to voice his concern for my general well-being. Have I mentioned this is what happens after my easy runs, with a few walk breaks thrown in? Yeah. It's humbling. Now, I'm not complaining. It's beautiful

1st Wedding Anniversary--Celebrating with Chocolate!

One year ago today, I married the love of my life. And I couldn't be happier! In celebration of our very first anniversary, here are some pictures of our favorite moments together: Our first trail race together Hiking together in GA And of course, our wonderful wedding in Hong Kong. We both decided to keep things very simple, with a casual ceremony with a few friends and family and then lunch at the Mandarin Oriental. Exactly what I wanted! With our parents after making it official! Our entire wedding party. Just family and dear friends! Goofing around with my garter at the reception lunch! You think you know what couples do after they get married? You know, their first night at man and wife? If you guessed eat ridiculously delicious chocolates in their bed at the Grand Hyatt, you're right.  Oh, I haven't changed. One year later and I still celebrate with sweet things! Thanks Tim, for being a wonderful husband. I love you!

Brace Yourselves: Cuteness is Coming

One of the hardest things about moving, for me, was wondering how the cats would adjust each time. Although our cats are super travelers at this stage, I feel really guilty every time we have to pack them up and force them onto a plane. I remember my grandma telling me years ago that when she moved with a cat, they put butter on their paws. That way, the cats spent the first day in a new house licking their paws to get them clean, and that was enough time to lose the "smell" of the old house. I love that story, and I wish the same principle applied to longer moves. Anyway, that's a super long intro to say that for the fellow cat ladies out there, our three fur babies are insanely happy in this jungle gym of a home here in Florida. It's warm, there are plenty of sunny spots to curl up a take a nap, and they have lots of room to spread out. Despite the space, of course, they still usually want to take a nap on my head at night.
