A Marshmallow the Size of My Head!

I have a tendency to exaggerate a little. Maybe a lot. Things I eat are the best in the world - until my next meal. The movie was my absolute favorite - until the next time I'm at the theater. So you are forgiven for thinking I maybe just found a slightly larger than normal marshmallow. But you would be wrong. Exhibit A:


Yes, that is a 2 pound marshmallow. What else would you expect me to get on my birthday? By the way, thanks to everyone who sent message, emails and comments to me wishing me a happy birthday - gracias! Hubby and I had a great dinner with friends on Thursday night, and then a trip to Chattanooga on Friday for lunch in a restaurant I was really excited about - 212

They are a slow-food restaurant, so everything is from the area. LOVE that. The decor was horrendously outdated, but you can forgive them for that because the food was amazing. I had local baked chicken on a butternut squash/pear risotto:


And hubby went with the trout, spinach and sweet potatoes. 


Anyone ever get food envy? That's when you see what the other person ordered and wish you got that instead. I almost always feel that way, but not yesterday - I won the ordering game! I think the secret to amazing risotto is clearly equal parts rice and cheese - it was so gooey and stringy and fabulous.

We walked around the city for a while taking photos and exploricating. Yep, exploricating. My new word. Bridges, cliffs, rivers, buildings - Chattanooga is a nice city indeed. 



I was finally hungry enough to grab dessert. Any guesses? I went crazy and got frozen yogurt, just for a change. I like to be unpredictable, you know?


Anyway, between frozen yogurt, a sweet drink from Starbucks and, um..."birthday oatmeal" (yes, thats my normal chocolate/peanut butter oats topped with sprinkles) I couldn't even think about attacking the marshmallow quite yet. 

Sprinkles = Festive!
So today will be official Marshmallow day. I'll take any and all suggestions on how to devour this guy:


Advice or suggestions on how to eat this marshmallow? 
I'm thinking cut it into pieces and go for gourmet s'mores? Cut some up to float in hot chocolate? Slice it like bread, spread with nutella and hope I don't die from sugar overload?

Do you get "food envy" when someone's order looks better than yours?
No matter how amazing my meal is, I usually want to try the other person's anyway. Anyone remember the Friends episode where Joey won't share his fries? So glad hubby isn't like that. :)

    Sometimes I get food envy, but not often...because a lot of the time people order meat and it doesn't interest me!!

  3. my roommates gf makes the BEST simple dessert- get some type of souflee dish or oven friendly dish
    roll out graham crackers so all thats left is fine crumbs- mix in nutella & peanut butter top with marshmallows and put in the oven on broil long enough to slightly brown the marshmallows- its amazing.

    we've also done it with nutella and broken up reeces cups too- delicious!

    I was thinking s'mores and hot chocolate, so I'm no help at all. Maybe sitting in a dark corner and just digging in face first ;).

  6. There are tons of things you could make with a marshmallow "cream," by melting that thing, but I don't want you to do that. You need to make a giant s'more and try to take a bit outta it. For our entertainment.

  7. I'm glad you had such a good birthday! I was surprised when I saw that the marshmallow was literally as big as your head. Ha ha. My first thought on how to eat it was roasted with Nutella and graham crackers. (They have gluten free graham crackers that are pretty good. My mom gave me some, but I'm not sure where she got them.)
    Your birthday meal looked delicious, and your birthday oatmeal was so cute too.

    P.S. I love how open your house is with those big, pretty windows. Looks like you live in a really pretty place.

    2) Buy the red and green holiday Rice Krispies and make Rice Krispie squares! Never too early for a little Christmas spirit...

  13. Happy Belated Birthday! Never saw a marshmallow that HUGE before. I guess you could slice it up and make a million different thngs out of it like Rice Krispie treats, Smores, and the hot chocolate idea is a good one too! Glad you had a great day!

  19. That marshmallow is awesome!!! I love your idea about spreading it with nutella….mmmmm. I'd also make s'mores! The best thing about the size of the marshmallow is that you can do several things because it's so big! Enjoy :)

  27. Aw have fun with your marshmallow :) I would probably chop it in half and roast half of it by the fire for a s'more. And the other part I'd somehow make into marshmallow fluff, not sure exactly how to do that though.

    I enjoyed your Chattanooga photos, I'd like to live in one of those homes right on the water. And your meal looked delicious!

    That marshmallow looks like happiness spun from sugar itself :) I would definitely go the gourmet smores option or use some of it as a buffer between layers of chocolate cake with chocolate butter cream frosting. I think I'm experiencing mental sugar overload already...

Race the Bar 5k Recap (AKA: A Personal Worst!)

Do you remember a few weeks back, when I was all braggy about running in Florida in February/March? Sunny mornings around a lake with a light breeze off the water have turned, cruelly, into humid stretches of time where I am humbly reminded of my own limitations. You guys, I see these gazelle-like creatures, men and women alike, who prance on my running route with compression socks, a soft glow of perspiration at their brow. It's beautiful. I dare not step outside without some awful visor or wide-brimmed hat. 1st Wedding Anniversary--Celebrating with Chocolate!

One year ago today, I married the love of my life. And I couldn't be happier! In celebration of our very first anniversary, here are some pictures of our favorite moments together: Our first trail race together Hiking together in GA And of course, our wonderful wedding in Hong Kong. We both decided to keep things very simple, with a casual ceremony with a few friends and family and then lunch at the Mandarin Oriental. Exactly what I wanted! With our parents after making it official! Our entire wedding party. Just family and dear friends! Goofing around with my garter at the reception lunch! You think you know what couples do after they get married? You know, their first night at man and wife? If you guessed eat ridiculously delicious chocolates in their bed at the Grand Hyatt, you're right.  Oh, I haven't changed. One year later and I still celebrate with sweet things! Thanks Tim, for being a wonderful husband. I love you!

Brace Yourselves: Cuteness is Coming

One of the hardest things about moving, for me, was wondering how the cats would adjust each time. Although our cats are super travelers at this stage, I feel really guilty every time we have to pack them up and force them onto a plane. I remember my grandma telling me years ago that when she moved with a cat, they put butter on their paws. That way, the cats spent the first day in a new house licking their paws to get them clean, and that was enough time to lose the "smell" of the old house. I love that story, and I wish the same principle applied to longer moves. Anyway, that's a super long intro to say that for the fellow cat ladies out there, our three fur babies are insanely happy in this jungle gym of a home here in Florida. It's warm, there are plenty of sunny spots to curl up a take a nap, and they have lots of room to spread out. Despite the space, of course, they still usually want to take a nap on my head at night.
