Weekly Recap, New Eats and a Winner!

Another week come and gone! It hasn't been a week of anything spectacular but when nothing bad happens it's considered a win, right?

Monday: 20 minutes of Spin, 45 minutes of yoga
Tuesday: 6 Miles Running
Wednesday: 45 Minutes of Spin, 30 Minutes of Strength Training
Thursday: 7 Miles Running
Friday: Rest Day!
Saturday: 13.1 Mile of Running
Sunday: 30 Minutes of Spin, 30 Minutes of Strength Training

That last workout was definitely the best, because I had an awesome companion - hubby! We each tackled 10 minutes of cardio separately - Tim on the treadmill and me on the bike - and then did the strength training together. Push-ups, ab work, planks and tricep dips. Awesome workout!

I had to bribe him with burgers and fries from Five Guys afterwards, and a trip to see the new Mission Impossible. It was good, but like 2 hours longer than it needed to be. We get it already. There's a crazy mission, a bomb, some guns and an international misunderstanding. It's been done.

Fun eats the last couple of days start with my "invention" of ricotta cheese in eggs. Note that the word invention is in quotation marks. That's because I thought I was a genius for thinking of the combination, only to realize when I Googled it that about 6 million people had already been there, done that.


I made an omelet with two whole eggs, one egg white, tomatoes and a big scoop of ricotta cheese and it fluffed up to be HUGE. Paired with some pita bread and cucumber salad.

This dinner is my husband's absolute favorite lately - with the exception of burgers form Five Guys, because you just can't compete with that, can you? Baked chicken tenders that taste almost as good as fried. Tenders dipped in whole wheat flour, then egg whites and finally bread crumbs. Seriously good! Tastes great with some salad and roasted sweet potatoes:

Anyone have any plans for the holiday tomorrow?
Sadly not for me, I'm working tomorrow. I actually kind of forgot it was a holiday until this weekend!

Anyone watching the Golden Globes tonight? What's better - the award ceremony itself or the fashion recaps the next day?
Right now it's on in the background, but I get kind of bored watching it to be honest. BUT - I'll be all over the worst dressed in a minute. That I can totally get behind!

    No plans here and not watching the Golden Globes. I might try and hit up the gym but I think its closed being its a holiday tomorrow (gym on base). Not sure. If it is, I will just do some yoga (30 mins). Its snowing and will continue to snow like this until Tuesday so no running outside for me!

  5. Yum! I have to admit...the roasted sweet potatoes sound the best! Love that you had a workout buddy today :) nothing exciting for the holiday exept that I am flying out for my first interview. Eeek!

  7. Not likely watching the Golden Globes. All these award shows!

    I loved roasted veggies of all kinds... and especially those orange sweet potatoes that we incorrectly cally yams here. I love them with ketchup too! The Captain makes them in wedges for me and the edges get crispy like oven-fries.

  11. Golden Globes are on right now, but it's going to be turned soon- Dallas hates Hollywood. Can't say I really blame him.

    Great week! I'm thinking I'm going to cut back to 3 days/week running. With my history of injuries I'm trying to figure something out for this next marathon training cycle.

  12. what guy doesn't love FIVE GUYS? good stuff. although the kids meals (chicken tenders) is a close second. My husband likes it with peas and macaroni. Yep, he's 5 yrs. old.

  17. I didn't have to teach at 8am this morning, so I actually slept in until 8. I've had a cold all weekend so my plans for the day include taking it easy and doing a bit of work on class prep for the rest of the week.

  19. Maybe you didn't invent the ricotta idea, but you brought it into my life, and now I can't wait to try it. I'm somehow sick again so my plans today are "lay around and try not to cough until I puke". Good times!

  23. Newness for me: I started Yoga this week. Today was my first day!

    Monday I was still out of town from a winter, snow 13.1 on a snow covered gravel trail. Enjoyed the scenery out there--but it was never a race in my mind due to the snow.

Race the Bar 5k Recap (AKA: A Personal Worst!)

Do you remember a few weeks back, when I was all braggy about running in Florida in February/March? Sunny mornings around a lake with a light breeze off the water have turned, cruelly, into humid stretches of time where I am humbly reminded of my own limitations. You guys, I see these gazelle-like creatures, men and women alike, who prance on my running route with compression socks, a soft glow of perspiration at their brow. It's beautiful. It's also a harsh reminder that I am not them. I am currently running in the thinnest, smallest items of clothing I can without offending anyone (shirt stays on, people). I dare not step outside without some awful visor or wide-brimmed hat. When I hop in the shower after a run, my face is a deep crimson that causes my husband to voice his concern for my general well-being. Have I mentioned this is what happens after my easy runs, with a few walk breaks thrown in? Yeah. It's humbling. Now, I'm not complaining. It's beautiful

1st Wedding Anniversary--Celebrating with Chocolate!

One year ago today, I married the love of my life. And I couldn't be happier! In celebration of our very first anniversary, here are some pictures of our favorite moments together: Our first trail race together Hiking together in GA And of course, our wonderful wedding in Hong Kong. We both decided to keep things very simple, with a casual ceremony with a few friends and family and then lunch at the Mandarin Oriental. Exactly what I wanted! With our parents after making it official! Our entire wedding party. Just family and dear friends! Goofing around with my garter at the reception lunch! You think you know what couples do after they get married? You know, their first night at man and wife? If you guessed eat ridiculously delicious chocolates in their bed at the Grand Hyatt, you're right.  Oh, I haven't changed. One year later and I still celebrate with sweet things! Thanks Tim, for being a wonderful husband. I love you!

Brace Yourselves: Cuteness is Coming

One of the hardest things about moving, for me, was wondering how the cats would adjust each time. Although our cats are super travelers at this stage, I feel really guilty every time we have to pack them up and force them onto a plane. I remember my grandma telling me years ago that when she moved with a cat, they put butter on their paws. That way, the cats spent the first day in a new house licking their paws to get them clean, and that was enough time to lose the "smell" of the old house. I love that story, and I wish the same principle applied to longer moves. Anyway, that's a super long intro to say that for the fellow cat ladies out there, our three fur babies are insanely happy in this jungle gym of a home here in Florida. It's warm, there are plenty of sunny spots to curl up a take a nap, and they have lots of room to spread out. Despite the space, of course, they still usually want to take a nap on my head at night. Obviously. They also love climbing on ou
