Breakfast for Dinner (And Lunch, and Dessert...)

It's really no secret that every day starts out with a bowl of oatmeal for me. Even when I want to try new breakfast recipes, the call of the oat is just too strong. I end up making the more elaborate breakfast dishes, but for lunch, dinner, or even a late night snack instead. And who can argue with that logic when you get to eat things like these delicious pumpkin pie pancakes for your Sunday lunch?


I actually started out with the plan to make crepes, but after I had made the first one the batter was too thick. The first one was pretty though, so I'll take it:


The recipe for the batter is incredibly simple, and to be honest I didn't even follow it to the letter at all. Find any batter recipe for crepes/pancakes online, whichever you prefer, or use a boxed mix. I won't tell! The only difference to these is a heaving spoonful of pumpkin puree (per serving) directly into the batter. The filling is where all the magic happens. It's a simple mix of:

-Pumpkin Puree
-Brown Sugar
-Vanilla
-Cinnamon
-Nutmeg

The whole thing is topped off with vanilla greek yogurt and a little sprinkle of cinnamon. Divine! 

Yes, still wearing a robe at 1 on Sunday. So what?
If you aren't into the fall pumpkin love, how about a Spanish frittata? Our neighbors have tons of chickens and that means plenty of eggs for us to use up. This recipe calls for 6 eggs for about 3 servings.
I started with baked potatoes, sliced thinly and frying up in some oil:


These don't get moved the whole time-just let them brown on a low heat and add the extra ingredients as you go. The next layer is sauteed onions, broccoli and peppers. I sprinkle that later with some grated cheese, and then toss in some diced tomatoes and turkey. Really, it's a free for all. Toss in what you have lying around! The final stage is to beat 6 eggs and pour over the entire dish. 


Once everything is in the pan, cover it up and leave it alone for a good 15 minutes on a low heat. You want the eggs to set. If they're still runny, cook the dish a bit longer. 

The traditional way to serve this is to flip the whole frittata over so you can see the beautifully brown potatoes underneath. Except...that's tough. Think flipping a pancake, but 10x as heavy. No thanks. Instead, I served up two slices on each plate. One side so you can see the brown potato bottom, and the other side so you can see the omelette-like interior full of veggies:



If you use what you have lying around, this turns out to be a really cheap meal, and perfect for any time of day.

The hubby and I have made crepes together a few times, and it's always so much fun to make different combinations and toppings. Today he stuck with a plain batter, and filled them up with bananas and chocolate syrup. We've made apple fillings, Baileys and brown sugar fillings...the list is endless!

Ever eat breakfast for dinner?
I used to make eggs and toast or even pancakes for dinner all the time, but the hubs isn't a huge fan of traditional "breakfast" foods. Other than crepes, bagels, and cereal, he's just not terrible interested. So I save those meals for when I'm just cooking for one! I had a midnight breakfast feast once during finals in college, and I remember it being such a fun time. Bacon at midnight? Who can resist that!

  2. We eat breakfast for dinner often. I make a copycat recipe of the Cracker Barrel's egg and ham casserole, but it has to be prepped ahead - can't think ahead like that relating to breakfast so I put it together and have it for dinner . .. super easy, fast and delicious.

  3. I'm really boring when it comes to breakfast. It's either oatmeal or cereal suicides for me!! I do love pancakes though so I may just have to steal your recipe! I'm not a huge fan of breakfast foods either. I don;t do the eggs or bacon or any of that...but oats and cereal - I could eat for every meal!!

  4. "the call of the oat" is very strong in our house too.

    We do a lot of omelets in our house. Mike's not a fan of waffles or pancakes, so we rarely eat those. He says "fancy" breakfast to him means eggs.

  5. Because he's in the music biz my husband is home in the morning so we always have family breakfast as opposed to family dinner. I try to do I nice hearty breakfast so we often have the Spanish tortillas, chiliquilles, waffles or fancy oatmeal with add ins to name a few.

    I love breakfast for dinner! It's a rarity here, perhaps I need to do it more.

  6. I love breakfast for dinner! I went out to "dinner" (omelets) on Saturday night with my husband. I think this stems from the fact that my dad can't cook. When my mom was out of town he'd make us breakfast for dinner because that is all he knew.....

  9. I have breakfast for dinner much more often than not haha... I love all breakfast foods! But a lot of the time I have cereal or oatmeal... whoops!

  10. The hubs loves pumpkin pancakes, but I haven't been a good wife this year and actually made them for him. Pancakes are a great way to carb up premarathon, so maybe I'll be a good little unemployed housewife and throw some together for him.

  13. I just recently started making frittatas as my parents have chickens. I love them! you can totally clean out the fridge and make a tasty meal. AND Im totally devoted to pumpkin right now, its sick.

  18. an easy way to flip that frittata is to put a plate on top of the frying pan, hold it down and flip it over onto the plate. place the pan back on the burner, then slide the whole thing back into the pan carefully. easy peezy!

  19. I make waffles for dinner. I think of it as a lazy dinner, but then when I'm doing it, I realize it's a pain in the ass and makes a huge mess. Then I forget and do it again. Vicious cycle.

  22. Hubby loves waffles. LOVES LOVES LOVES waffles. When we have breakfast for dinner, it's usually omelets or crepes. We put either ham and cheese or banana, chocolate sauce and coconut in our crepes.

    No special recipes. We always do monkey bread or cinnamon rolls for Christmas morning but that's it.

    We eat breakfast for dinner at least a couple of times a monht. It's quick and easy and yummy!

  29. Those crepes look amazing! I've always been scared to make them, though, I think because I'm so terrible at flipping pancakes that I can't imagine flipping something even more delicate.

  32. Yum I do that too. Whatever leftovers I have, I just use as frittata makers! It is a great way to not waste food! I love breakfast for ANY meal at ANY time!

  37. Yum! I love all breakfast food and could it eat it all the time, lately pancakes have definitely been my weakness, I am making them all the time! Mostly with strawberries! I haven't tried pumpkin yet but I may do that in the future.

Race the Bar 5k Recap (AKA: A Personal Worst!)

Do you remember a few weeks back, when I was all braggy about running in Florida in February/March? Sunny mornings around a lake with a light breeze off the water have turned, cruelly, into humid stretches of time where I am humbly reminded of my own limitations. You guys, I see these gazelle-like creatures, men and women alike, who prance on my running route with compression socks, a soft glow of perspiration at their brow. It's beautiful. I dare not step outside without some awful visor or wide-brimmed hat. 1st Wedding Anniversary--Celebrating with Chocolate!

One year ago today, I married the love of my life. And I couldn't be happier! In celebration of our very first anniversary, here are some pictures of our favorite moments together: Our first trail race together Hiking together in GA And of course, our wonderful wedding in Hong Kong. We both decided to keep things very simple, with a casual ceremony with a few friends and family and then lunch at the Mandarin Oriental. Exactly what I wanted! With our parents after making it official! Our entire wedding party. Just family and dear friends! Goofing around with my garter at the reception lunch! You think you know what couples do after they get married? You know, their first night at man and wife? If you guessed eat ridiculously delicious chocolates in their bed at the Grand Hyatt, you're right.  Oh, I haven't changed. One year later and I still celebrate with sweet things! Thanks Tim, for being a wonderful husband. I love you!

Brace Yourselves: Cuteness is Coming

One of the hardest things about moving, for me, was wondering how the cats would adjust each time. Although our cats are super travelers at this stage, I feel really guilty every time we have to pack them up and force them onto a plane. I remember my grandma telling me years ago that when she moved with a cat, they put butter on their paws. That way, the cats spent the first day in a new house licking their paws to get them clean, and that was enough time to lose the "smell" of the old house. I love that story, and I wish the same principle applied to longer moves. Anyway, that's a super long intro to say that for the fellow cat ladies out there, our three fur babies are insanely happy in this jungle gym of a home here in Florida. It's warm, there are plenty of sunny spots to curl up a take a nap, and they have lots of room to spread out. Despite the space, of course, they still usually want to take a nap on my head at night.
