Gluten-Free Spaghetti and HEALTHY FRIES!

After a pretty horrific experience with rice pasta a few months ago, I thought maybe my pasta days were over since I'm been eating more gluten-free. I took a chance and bought a new corn/rice blend the other day:

I was so suspicious when I cooked it. The previous rice pasta I made just FELL apart as it was cooking. No bueno. This one was perfect!


Topped with some chicken breast cooked in tomato sauce and rosemary, and a sprinkle of parmesan cheese on top. Yum!

In other food news, I've been seriously overusing my oven lately. It's just so nice to have one after so long! EVERYTHING is being roasted, so I've made some pretty exciting healthy fries. A potato cut up and lightly sprayed with oil, salt and pepper makes yummy "fries", but it's probably one you already know about:


So here's one you probably haven't tried: okra fries!

I got this amazing bag of garden veggies from my friend this past weekend:


But I was a little stumped about what to do with the fries. I love roasted anything, so I was going to slice and roast them. But then I decided to cut them like fries, toss them in olive oil and salt, and roast them a bit longer. I even dipped them in ketchup, they were so crunchy and delicious!


Finally had a run today, it felt so great after 3 non-running days in a row! 6 miles at 9:10 average pace. 

What is your favorite roasted veggie?
Broccoli! I love it so much, I could eat a whole pan of the stuff.

Crunchy or soft fries?
Crunchy and crispy all the way. The soft ones are gross!

DEFINITELY love crunchy fries...and I have not had fries in SO long...I should try some healthy ones :) I like pretty much any roasted veggie but definitely broccoli and white onions! yum! that pasta looks so delish!! And I am so glad to hear that you had an awesome run after some time off. I am hoping that is my experience as well...but I am still feeling some soreness so I think it will be a few more days. I tried the yoga video last night and it was TOUGH but I LOVE it! Thanks so much for the suggestion!

  2. I have been debating on trying rice pasta and you convinced me. I think my grocery store sells this brand too. When it comes to roasted veggies, I am definitely not an okra person. But I do love roasted veggoes and my favorite dish is when I roast together bell peppers, red onions, and portobella mushrooms. Then add a few drops of balsamic vinegar...Yum! And I actually had that today :D I can eat the whole roasting pan.

  5. Potatos are my favorite!! I like them with a slight crunch on the outside but soft on the inside and of course smothered in ketchup!!

  6. Love fries crispy on the outside and then nice and soft on the inside. And then, brace yourself, I dip them in a mixture of ranch and ketchup.

  7. I love crispy fries and my favorite thing to grill is green beans, they turn out crispy just like fries...we sometimes also fry them with olive oil, garlic, and almonds.

  8. Fries have gotta be crispy. Yummy! I have never had okra...I wonder if I can even buy it around here? hmmmm.

  9. The quinoa pasta is actually really good too. I hate rice pasta, not just because it's gross, but because it also gives me heart burn like crazy.
    And ditto on the broccoli AND the crispy fries. I'm an addict to both.

  10. That pasta dish looks great!

    I want to try kombu noodles whenever I can get my hands on them. They are gluten free (I think) and are made from seaweed.

    I love roasted red peppers. Those = crack.

  13. Love all roasted veggies but sweet potatoes and regular potatoes are the best! I will dip them in anything - ketchup, BBQ sauce, hummus...

    I will eat fries crunchy or soft! I'm not picky when it comes to deep fried carbs! HA

  14. I roast anything vegetable: onions, tomatoes, asparagus, cabbage, fennel, sweet potatoes, etc.

    I love me some crunchy fries! The only soft ones I like are from Red Robin. They put something into their frying oil to make those so addictive.

    I'm all about any type of fry. I don't discriminate! hehe when I go to In-n-Out, hubby orders his extra crispy...so I steal some while I enjoy my soft ones!:)

  19. I LOVE roasted broccoli, I could eat it every day. Brussel sprouts are awesome too....I love every veggie roasted actually. I might need to try okra, I don't think I've ever bought it fresh! I don't really like french fries though, I might steal one of my husbands if they are special, like old bay fries, but that's about it. Sweet potato fries are another story, however.

Race the Bar 5k Recap (AKA: A Personal Worst!)

Do you remember a few weeks back, when I was all braggy about running in Florida in February/March? Sunny mornings around a lake with a light breeze off the water have turned, cruelly, into humid stretches of time where I am humbly reminded of my own limitations. You guys, I see these gazelle-like creatures, men and women alike, who prance on my running route with compression socks, a soft glow of perspiration at their brow. It's beautiful. It's also a harsh reminder that I am not them. I am currently running in the thinnest, smallest items of clothing I can without offending anyone (shirt stays on, people). I dare not step outside without some awful visor or wide-brimmed hat. When I hop in the shower after a run, my face is a deep crimson that causes my husband to voice his concern for my general well-being. 1st Wedding Anniversary--Celebrating with Chocolate!

One year ago today, I married the love of my life. And I couldn't be happier! In celebration of our very first anniversary, here are some pictures of our favorite moments together: Our first trail race together Hiking together in GA And of course, our wonderful wedding in Hong Kong. We both decided to keep things very simple, with a casual ceremony with a few friends and family and then lunch at the Mandarin Oriental. Exactly what I wanted! With our parents after making it official! Our entire wedding party. Just family and dear friends! Goofing around with my garter at the reception lunch! You think you know what couples do after they get married? You know, their first night at man and wife? If you guessed eat ridiculously delicious chocolates in their bed at the Grand Hyatt, you're right.  Oh, I haven't changed. One year later and I still celebrate with sweet things! Thanks Tim, for being a wonderful husband. I love you!

Brace Yourselves: Cuteness is Coming

One of the hardest things about moving, for me, was wondering how the cats would adjust each time. Although our cats are super travelers at this stage, I feel really guilty every time we have to pack them up and force them onto a plane. I remember my grandma telling me years ago that when she moved with a cat, they put butter on their paws. That way, the cats spent the first day in a new house licking their paws to get them clean, and that was enough time to lose the "smell" of the old house. I love that story, and I wish the same principle applied to longer moves. Anyway, that's a super long intro to say that for the fellow cat ladies out there, our three fur babies are insanely happy in this jungle gym of a home here in Florida. It's warm, there are plenty of sunny spots to curl up a take a nap, and they have lots of room to spread out. Despite the space, of course, they still usually want to take a nap on my head at night.
