Tomato Sauce = Dinner

Did my 6 miles, woo-hoo! I took some advice and made sure the incline was a minimum  of 1% the whole time, and hopefully that will be a bit closer to real outside running. After eating the spaghetti squash for lunch, I realized that I just really love tomato sauce. More than any pasta it would normally go on top of. All I wanted for dinner was sauce. All I could think about during my run was sauce.
So for dinner?
I ate sauce.
Since just eating sauce is maybe a little weird, I figured out how to make it the main part of my meal. First I made some homemade rye croutons. So delicious. I cut one slice of bread into the crouton sizes, and tossed them in oil, and microwaved them for 90 seconds (stirring once in between). Easy peasy, croutons done.
I wilted a ginormous bowl of baby spinach and mixed that in with some tomato sauce. Covered it with the rye croutons, and done!


This tasted like the most delicious thick, chunky tomato soup ever. I feel as if I am becoming a little bit of a microwave pro, between the homemade croutons and the spaghetti squash. I will be baking every single day all day long once we have our house completed and kitchen done. Who knew you could long for an oven so much?

Do you guys remember the post I made on Oats in a Nutella Jar? That was on Saturday. We immediately bought a new jar. This is today.

  4. hahaha that dinner made me laugh. it SOUNDS good, but sauce gives me wicked bad heartburn so I think that would kill me. the croutons, however...

    I'll definitely be checking back in to see if you get any good microwave recipes! I'm all for easy meals.

  6. Haha, well the sauce dinner I am not so sure about but I must say I eat my fair share of strange foods! I micro my squash too and even sometimes sweet potatoes. Oh and oatmeal too but I am not sure what else. I will have to think about it.

Do you remember a few weeks back, when I was all braggy about running in Florida in February/March? Click this link at your own risk, but let it suffice to say that I have some wild hair. No, not a couple of curls. A wild, beastly tangle that is NOT allowed out on its own. Ever. Brace Yourselves: Cuteness is Coming

One of the hardest things about moving, for me, was wondering how the cats would adjust each time. Although our cats are super travelers at this stage, I feel really guilty every time we have to pack them up and force them onto a plane. I remember my grandma telling me years ago that when she moved with a cat, they put butter on their paws. That way, the cats spent the first day in a new house licking their paws to get them clean, and that was enough time to lose the "smell" of the old house. I love that story, and I wish the same principle applied to longer moves. Anyway, that's a super long intro to say that for the fellow cat ladies out there, our three fur babies are insanely happy in this jungle gym of a home here in Florida. It's warm, there are plenty of sunny spots to curl up a take a nap, and they have lots of room to spread out. Despite the space, of course, they still usually want to take a nap on my head at night.
